Another birthday cake!
How relieved is that when you don't have to scratch your head and think about what to buy for your loved one's birthday! You do want to impress someone with a creative gift, don't you?! And it's hard, isn't it?! Especially for my husband, my long time partner, it's quite challenging when we've been through a lot for so long. You don't really NEED something that you want to receive from your wife/husband on your birthday.
It's the beauty of loving to cook. While you are enjoying baking the birthday cake to your loved one, you are also anticipating how grateful he/she would be, and how satisfying and proud you would be to yourself.
(makes a 6" cake)
Ingredients:
Crust:
1 1/4 cup oreo cookie crumbs
1/3 cup melt unsalted butter
1/3 cup melt unsalted butter
Filling:
450g cream cheese, softened
1/2 cup sugar
3 eggs, room temperature
1 tbsp vanilla extract
Topping:
1 cup fresh blueberries
1/3 cup sugar
2 tbsp fresh lemon juice
1 tbsp cornstarch
Directions:
Preheat oven at 350F.
Make the crust by mixing all the crust ingredients together.

Press the mixture onto the bottom of the spring form pan. Bake crust for 10 mins. Set aside to cool.
Turn down oven temperature to 275F.
Beat the cream cheese until smooth. Add sugar and egg (one at a time). Mix in vanilla extract. Blend well.

Pour the filling over the cooled crust. Tap the pan on counter a few times to release all the air in the batter.
Bake in waterbath for an hour, or until the edge of the cheesecake is puffed but the center is still wobbly and wet looking.

Turn off the oven with the door slightly opened, let the cheesecake sit in the oven to cool completely, at least an hour.
Remove from water. Chill for overnight.
To prepare blueberry topping, combine all topping ingredients in a saucepan over medium-high heat. Bring to a simmer, and cook until berries break down, about 4 mins. Let cool, then refrigerate.
Spoon topping over cake and serve.
