Rosemary Lemon Cookie

 
No doubt, rosemary is one of my favorite herbs. Last summer, we started to seriously grow it in our backyard, and it came with great success. It's been featured in savory dish and sweet treat. Then, I've realized that, unlike most of other herbs, rosemary does not die during winter. How can you not love this character?!

(makes around 24 cookies)
Ingredients:
2 sticks butter, room temperature
3/4 cup sugar
1 egg
1 tsp vanilla extract
1 tbsp fresh rosemary, finely chopped
2 tsp grated lemon zest
2 1/4 cup all purpose flour
1/2 tsp salt

Directions:
Beat butter and sugar together in a stand mixer until light and fluffy. Add the egg and vanilla, mix until well blended.

Add rosemary, lemon zest, salt and flour. Mix well.

Divide the dough in half and shape them into logs. Place on a piece of parchment paper. Roll the logs about 1 1/2" in diameter. Chill in the freezer for at least an hour.

Preheat oven to 375F. Take the logs out of the freezer. Cut the logs into 1/4" slices and place on a parchment covered baking sheet. Bake for 12-15 mins until the edges are golden brown. Cool on a wire rack.

I love rosemary. I have to plant them. Didn't know that they don't die in winter. That's the best part of it. Your cookies look gorgeous. Would love that with tea...yum.

I have been thinking to grow a few rosemary next to my window because it is not that convenient to buy the fresh ones here. I do mean growing a few because the space available for me is tiny. I shall take this as my reminder.

Yesterday, I almost made the zebra cake recipe, which I found here. Didn't get a chance but I still plan on making it. Now, I'm adding the Rosemary Lemon cookie to the list. LOL!

P.S. Also for the longest time, I've been wanted to do a window garden. If it ever happens, perhaps I can try to grow rosemary, too.

Rosemary and lemon sounds great together. The cookies look amazing, lululu. I never have patience for gardening. I can only have a succulent plant in my condo. I just have to water it once a week. Or once every two weeks if i forgot:)

I've never tried rosemary and lemon in a sweet before, but it sounds delicious... especially since it's such a great combo for savoury dishes.
Unfortunately, our winters are too cold for rosemary to survive. :( I need to start experimenting with bringing the plants indoors, because I looooove the smell of fresh rosemary.

Oh lululu, I am in love with these cookies! Wow. I have a huge pot of rosemary - and yes, it's wonderful that it survives the winter! Definitely need to make these. Yum.

Hee hee lululu I know I've told you like a million times but Ethan is way too adorable. He has such pensive eyes! Anyways these cookies look awesome, my mother in law has a gigantic rosemary bush and seeing that it's citrus season I have no other choice but to make these, so thank you for sharing :)

Great recipe. After cutting the cookies, I used a cookie cutter to make ribs. Beautiful! I only baked one batch, and will take the other half out when I want to have buttery cookies again quick. The rosemary does complement the lemon, and isn't strong or overpowering.
